Dodie Miller started Cool Chile Co in 1993 after much cooking, research, travelling and nagging from chile deprived friends. Our shipments and inspiration come from Mexico with the aim to provide a whole new spice cupboard of flavours and heat sensations for Mexican and home cooking.
Kathy O'Toole has managed many restaurants, now we are lucky to have her organisational skills at Cool Chile, she understands restaurants needs as well as those of individual customers, she runs the accounts, the tortilla section and keeps us all on our toes!
Lulu Herzog runs the dispatch section of Cool Chile, plus she hand-makes all of our Mexican chocolate, mole poblano paste and enchilada sauce, she is a busy woman!
Magualida is in charge of packing, she packs the masa harina for Sainsburys and all of our retail packets, without her we would come to a stand still.
Joel Herzog (Lulu's brother!) is in charge of "El Monstrou" who makes all of our corn tortillas, he is in VERY early to make all our orders daily.
Sonia Garcia helps Joel make tortillas and then jumps into her other role as driver of the Cool Chile tortilla-mobile!
