Anchos are so called because of their broad shape, ancho meaning broad or wide. When fresh, anchos are called poblanos. Anchos are one of the most widely used chiles in Mexico and are prized for their deep red colour and dried fruity flavours. One member of the "Holy Trinity" group of chiles used in making mole sauces, the other 2 being mulatos and pasillas.

Cascabel means rattle, so named because of the rattling sound of the seeds when shaken. Mark Miller likens cascabel chiles to old red Bordeaux. Cutely named, this pretty chile is also known as chile bola.

Chipotles are smoked and dried jalapeños. Drying alone would not preserve the thick fleshed jalapeño, so they are smoked as well. The flavours that this produces are wonderful, therefore making it one of the most popular chiles. Although the heatscale indicates that it is not one of the hottest chiles the heat does linger on the lips and tongue. There are a few types of chipotles. We supply the morita variety, known for its cherry red colour, strong smoke and zingy heat. Perfect for all relishes and condiments as well as sauces, stews and soups.

De árbol means "treelike", and this chile plant grows like a little tree, sturdy and woody. De árbol chiles are related to cayenne varieties and pack a punch, good red colour too.

Uses: needs to be pureed and therefore makes great bright red sauces, soups, stews and salsas.
Guajillo means "little gourd" due to its shape. When made into sauces it can replace a tomato sauce in a recipe but with heat: bright red colour, sweet heat and tartness. Try it on pasta, pizza or in more traditional Mexican dishes like enchiladas.
