We grind this ourselves which produces a beautiful warm smell of freshly ground annatto and whole spices. This is a classic Yucatan recipe and used to marinate meat or fish before grilling. Imparts a deep savour flavour as well as a red colouring. Just mix with a mix of fresh orange nd lime juice to make a marinade.

We grind this ourselves to a Mexican recipe, the smell of freshly ground whole black pepper and Mexican oregano is heavenly, a very useful spice mix from the Yucatan that does more that spice up "bistec", great on fish, vegetables and chicken. Use as a dry rub, or mix a small amount with vinegar to make a paste, then rub on food and wrap in cling film to marinate or mix a small amount with flour but in a paper bag with your food and "shake n' bake".

We love this, is is beautiful and so exotically flavoured, try it! A black seasoning paste from the Yucatan, made from burnt chiles, garlic and spices. Dilute with water and a little vinegar to make chilmole para rellenos (a soupy dish with a bit of rice, shredded chicken and chilmole spiced ground pork stuffing). Beautiful exotic black paste.
