We have had a sample of our tortillas tested and under the new European Union regulations can call our tortillas "gluten free". Results showed they contain less than <5 mg/kg.

Corn Tortillas! we make fresh corn tortillas daily with our new machine called El Monstruo right here in London, the best ever, just like in México.
There is a 10 day shelf life on our corn tortillas unrefrigerated or they maybe frozen for up to 6 months.


These tortillas are wheat and presevative free and can be griddled to make soft taco, folded and griddled into quesadillas or dipped and rolled for enchiladas. Should be used within a week. Once opened wrap tightly to prevent them from drying out and keep refrigerated.
Ingredients: stone ground maize,cellulose gum,water,trace of lime (calcium hydroxide)

Make your own tostadas, flautas etc or hand cut for totopos (chips). These tortillas are designed to have reduced puffing and therefore less greasy when fried. These Ingredients: maize flour, water, trace of calcium hydroxide.

Maize is slaked with lime (calcium hydroxide) and then ground to a fine powder.
This is perfect for making corn tortillas.

Cooked pozole in a tin 245g drained weight. Taste is not as good as the dried BUT it does not require the 4 hours of cooking that dried pozole does, so is good to use in a quick dish. Let us know what you think.

Pozole Rojo Kit

Pozole is a stew of dried corn and porky bits, to make it rojo there is the addition of ancho and guajillo chiles, plus wild Mexican oregano to spinkle on top and a few extra hot crushed árbol for those who like seriously spicy. Will feed 6 people.

What is in the kit:
500g pozole, 60g ancho chiles, 20g guajillo chiles, 12g of crushed árbol chiles, 4g wild Mexican oregano, recipe sheet.

What you will need:
1kg pork shanks, 1 pork trotter, 500g pork shoulder, 1 onion, head of garlic, salt.

What you will need to Garnish:
2 limes, 1 bunch radishes, 1/2 head white cabbage or iceberg lettuce or chinese cabbage, 1 packet corn tortillas, vegetable oil.

Equipment needed:
2 large pots, blender or food processor, sieve.
