A paste made with chiles, nuts and a touch of cocoa. Dilute with stock to make a rich tasty sauce for poached chicken, turkey or root vegetables. Left over mole sauce can be used to make enchiladas, as well as spicy mushroom stew swirled with creme fraiche and piled on rice. Yum. Each jar will make 1/2 litre of sauce. New recipe.
Ingredients: water, sunflower oil, sugar, chile pasilla, chile ancho, sesame seeds, almonds, masa harina (corn and calcium hydroxide, cocoa powder, sea salt, spices, garlic.

Mole (mo-lay) is a festive dish usually prepared from turkey or chicken for festive occasions. It combines chiles, nuts and a touch of cocoa. Vegetarian alternatives such as root vegetable can be substituted for the meat.

We grind cocoa nibs with unrefined sugar, whole almonds and stick cinnamon to make a paste which, when cooled in slabs is then grated for easy use. The recipe we use is a traditional Oaxacan recipe used to make hot chocolate or in mole sauces. We also find it good to make chocolate sauces for ice cream.
Ingredients: Roasted cocoa nibs (min 45%), brown sugar, whole almonds, wholestick cinnamon.

We use a pre Hispanic recipe for this drinking chocolate. It is made by grinding cocoa nibs with unrefined sugar, ancho chile, annatto and spices. Slightly spicy and warming.
