Dried hibiscus flowers to make agua fresca or tea. Refreshing, full of vitamin C and apparently good good for your kidneys.

It has been a long time coming but we have Mexican vanilla pods, they are expensive but the long slow maturation process that causes the expense makes it very worth while. The smell is a little citrusy, with notes of liquorice and toasted marshmallows. These are big, sticky glossy pods!

Cinnamon is used extensively in both sweet and savoury Mexican dishes. In Mexico you will find soft quills of cinnamon labelled as "Mexican cinnamon". In fact cinnamon does not grow in Mexico but it refers to the Sri Lankan variety rather than the harsher cassia bark. As labelling laws in the US and Mexico do not make it a requirement to label differently as we do, they refer to the soft bark quills as "Mexican".
