
Agua fresca de Tamarindo by Cool Chile
A classic agua fresca, it is popular because it is fruity, refreshing and soothing. It goes well with spicy tacos.
Makes 4 large drinks or 6 with ice.
100g Tamarind Paste
150g sugar
500ml boiling water
1 litre cold water
Put the tamarind paste, sugar and boiling water into a jug suitable for a stick blender, blitz until smooth. Rub the puree through a sieve into a jug and add the cold water. Stir and refrigerate. Serve cold with plenty of crushed ice.
