Quesadillas by Cool Chile

 
Quesadillas make great snacks as they are quick to prepare, after school, work or the pub, even for breakfast. They do not need a filling, all they need is cheese and a little salsa, but fillings add variety. So make your own creation, a little chorizo, some nasturtium flowers, rocket, what ever.
 
Makes 2.
 
2 Soft Corn Tortillas (15cm)
60-80g grated Gouda cheese (or other melting cheese)
60-80g filling such as mushroom and epazote or cactus (if desired)
A little oil
A couple of tbsp of salsa per quesadilla
(see salsa recipes or use Cool Chile Chipotle Salsa)
 
Heat a frying pan on medium heat. Rub or brush a little oil on one side of the tortilla and place in the pan, turn the heat down low. Apply the grated cheese to cover the tortilla with a little boarder. When the cheese beings to melt, add your filling to one half of the tortilla. Fold it in half and continue to cook until the cheese have melted and looks gooey. Remove to a plate and make the next one. Serve with your choice of salsa.
