Made with blue corn flour, our soft 15cm discs of corn are an essential for classic Mexican snacks and street food.

Tortillas are the plate, spoon and fork of Mexican food. These multitasking tortillas can be warmed to make soft tacos, folded and toasted to make quesadillas, covered in spicy sauce for enchiladas.

We make our corn tortillas fresh every day from Mexican masa harina (nixtamalized corn flour).

    Baja style fish taco with Chipotle Mayonnaise Recipe

    Cut a boneless fillet of white fish into 2½ cm wide finger length strips. Whisk together plain flour, salt and pepper, a little pinch of Cool Chile Co Chipotle Powder, an egg and very cold beer until batter consistency. Dip the fish in the batter to cover then shallow fry in a few centimeters of very hot oil in a high-sided pan until crisp and golden, flipping halfway through. Drain on kitchen towel then serve on warmed tacos with shredded lettuce and red cabbage, Cool Chile Co Chipotle Mayo and a squeeze of lime.

  • Preparation and Storage

    For soft tacos: Lightly toast each side of the tortilla in a hot pan (no need for oil) for around 20 seconds then keep covered until ready to serve.

    For totopos and tostadas: Cut tortillas into triangles for totopos, or keep whole for tostadas. Heat neutral oil in a high-sided pan or deep fat fryer and fry a single layer of tortillas, turning once, until crisp and just starting to colour. Drain on kitchen towel and sprinkle with salt before serving.

    Packed in a protective atmosphere.

    Storage: Keep refrigerated. Once open, wrap and consume by use by date.

    Suitable for freezing: Freeze on day of purchase and consume within 1 month. To use, prise tortillas off one at a time and cook from frozen, or keep wrapped to defrost in the refrigerator. Keep refrigerated and use within 2 days.
