Tamarind Margarita with Chile en Polvo rim by Cool Chile

 
This drink is a take on the Mexican sweets that mix tamarind with chilli, lime and salt.
 
Makes 400ml of syrup.
For tamarind syrup:
100g of Tamarind Paste
200g of sugar
375ml water (just boiled)
 
Makes 1.
For the Margarita:
50ml 100% Blue Agave tequila
25ml tamarind syrup
25ml lime
Chile en Polvo powder
Ice (enough to fill cocktail shaker)
 
Put all the syrup ingredients in a jug suitable for a stick blender, blitz until smooth, rub through a sieve into a container, keep in the fridge.
 
With a piece of lime, rub the edge of the margarita glass. Pour some Chile en Polvo on a small plate, turn the glass upside down and dab the rim in to make an even rim. 
 
Put all the margarita ingredients into a cocktail shaker and shake until your hands freeze to the metal. Pour into a glass, taking care not to splash on the rim, drink.
