This uses a combination of the brown and white meat of a crab. The brown meat is mixed with spicy mayonnaise and used as a base layer for the white meat that has been tossed with chilli, coriander and lime. The fried corn flavour of the tostada is fantastic with the spicy crab meat.
Combine all the ingredients to make the brown crab meat base for the tostada and pop into the fridge.
Toss all the ingredients for the white crab meat mix together, get the brown crab meat from the fridge and start assembling!
Place 1 tsp of the brown crab meat mix to the centre of tostada and with a back of a teaspoon push to the edges leaving enough of a rim so people can pick up the tostada without getting crabby fingers.
Then top with 1 tsp of the white crab meat salad, fluffing to the edges to cover the base layer.
Top with a bare sprinkling of the minced birds eye chilli if you wish! Serve with 1/8th of a lime.
