Cactus/Nopales Salad



Why eat cactus? Well, it is tasty and it’s good for you, having lots of nutrients and of course fibre. The cactus we eat are the paddles from the prickly pear cactus (Opuntia humifusa) which also produces the beautiful pink fruit that is used to make brightly coloured agua fresca. The paddles are severed from the plant and the spines removed before cooking. It has the taste and texture of slightly tart, crisp, cooked okra. This salad makes a great starter or tostada topping or you could serve it as a side with charcoal grilled steak.


  1. Put all the ingredients for the vinaigrette into a jar with a lid and shake.
  2. Add the onion and let sit while you prepare the rest of the salad.
  3. Drain the cactus and rinse. 
  4. Add the cactus to a bowl with the tomatoes, toss, then add the dressing and toss again and season to taste.
  5. Place the salad onto a platter and sprinkle with feta, radish, jalapeños and serve.
