Horchatito - with tequila añejo, espresso and peanuts

This is a short, iced drink, good for after dinner. It's a boozy, agave and coffee flavoured horchata enriched with peanuts and sweetened with our Café de la Olla Syrup. The Tapatío Tequila Añejo has lots of sweet cooked agave flavour that combined beautifully with the Mexican Coffee Peoples Espresso. For ease we have used rice milk as the base, plus it froths very nicely! 

Method

Pre- grind your cinnamon in a spice grinder. It doesn't have to be super fine. 

In a jug suitable for a stick blender add the rice milk, tequila, peanut butter, coffee, syrup and 1/4 tsp cinnamon. Blend until frothy. Add lots of ice to a small tumbler (200ml). Pour the horchata over, spoon foam on top. Sprinkle with some of the leftover ground cinnamon.
