Place the langoustine halves in a bowl and toss with the Mojo de Ajo.
Place 1 heaped tsp of Pea-amole onto a tostadita, sprinkle with micro herbs, press a langoustine half on top. Drizzle the langoustine with a little more of the garlicky mojo de ajo.
Place on a tray and serve within half an hour, so everything is fresh and crisp.
