Pomegranate Margarita

September through to November is pomegranate season, this is when they are juicy and very red. Their sweet tart flavour makes a refreshing cocktail, perfect for Halloween and Day of the Dead celebrations. We have found that the fresh juice is more complex than the bottled, but once in a cocktail you might be pressed to tell the difference. We squeezed our pomegranates by hand into a sieve over a bowl, but we have seen people use citrus reamers and other manual squeezers. We say if you are making just a couple drinks, try the fresh, if you are making for a crowd go for bottled with pride. We have used Sweet Hibiscus Cocktail Rim in the picture but it could easily take the Salty Chilli Cocktail Rim too, or you could make your own cocktail rim with half salt and half sugar.

Method

If you are squeezing your own pomegranates, cut them in half and squeeze over a a sieve placed over a bowl. This can be messy, so cover up. 

Cut a small wedge from the lime and juice the rest, reserve. Rub the lime wedge around the rim of your glass, then dip into the Cocktail Rim of your choice, add about 3-4 ice cubes to the glass. 

In a shaker add ice, tequila, pomegranate juice, lime juice and syrup. Shake very hard for at least 30 seconds. Pour carefully into your glass and taste with a straw or spoon, add a little lime juice if needed and stir gently. Serve straight away.
