Rhubarb T&T



Tequila & Tonic are fast becoming the new Gin & Tonic. Adding astringent rhubarb to this classic drink lends bright, earthy notes and is a refreshing way to celebrate the arrival of spring with its promise of the summer to come.


  1. In a rocks glass add 4-5 ice cubes.
  2. Add the tequila, lime, rhubarb syrup - stir and top with Fentimans rhubarb tonic water

Rhubarb Syrup 

  1. Cut the rhubarb into lengths that will fit your baking dish snugly in a single layer. 
  2. Sprinkle the sugar over, cover with foil and bake for 20-30 minutes, until the rhubarb is tender but not falling apart, 
  3. Remove from the baking dish and reserve. 
  4. Draining the rhubarb a couple of times to get a clear syrup
