Salsa Macha a fried chopped chilli salsa with nuts, garlic and sesame, it is very similar to Chinese crispy chilli in oil and can be used as a condiment or as part of a dressing.
This recipe uses leftover turkey (or chicken) and a few crunchy vegetables you might have lurking in your veg department!
While heating the frying pan brush both sides of the tortilla with oil.
Place the tortilla in the hot pan, cooking for approx 45 seconds on each side.
Remove the tortilla from the pan and place on a wire rack and bake until thoroughly crisp about 5-8 minutes.
Remove from the oven allow to cool.
You now have a tostada.
Deflame the onions
Add the onion, vinegar and salt to a bowl.
Stir and let macerate for 10 minutes.
Drain reserving the vinegar.
Making the turkey salad
In a bowl mix the turkey, carrot, cucumber, vinegar, coriander, salt and Salsa Macha.
Taste for seasoning and adjust with salt, salsa macha or vinegar as needed.
Building the tostadas
Place 3 slices of avocado on the tostadas then top with the turkey Salsa Macha mixture.
Serve with wedge of lime.
