Recado de Bistec, from the Yucatan, is mixed with citrus juice to make marinades or is used as a seasoning for stews and escabeches.
Mix 30g of the paste with 50ml of fresh citrus juice and use to marinate 500g of meat or fish, then barbecue, fry or roast.
For 1 x 250g steak: Dissolve 15g of the Bistec Seasoning Paste in a 25g lime juice. Marinate for 30 minutes - 1 hour, then barbecue, grill or fry. Or mix 5g of Bistec Seasoning Paste with 15g butter.
