Oaxaca is famous for its moles and maybe their most famous mole of all, is the mole negro. It has an alluring near black colour and an intriguing spicy flavour of highly roasted chiles and burnt seeds!

It is not a dish that you would make everyday, partially due to its complex process but also because of the rarity of one of the chiles that is used, the Chile Chilhuacle Negro. For convenience we have collated all the chiles and a couple of extras you will need to get our mole negro recipe under way
