Serranos are slender but thick fleshed, torpedos, that have a glossy skin and are notably hotter than the jalapeño chilli. Use raw in salsas like pico de gallo and guacamole or fry in a little oil for toreados, season with lime and soy sauce. Perfect for ceviches.
