G4 Tequila Blanco 108 comes off the still at 114 proof so this has had a touch of Felipe's 50/50 rainwater/springwater added to it, giving it a touch of minerality. It is like the G4 Blanco but amplified - medium-high viscosity, with a higher concentration of the natural oils making it punchier than the Blanco but with a similar flavour profile. It is rich, coating and long-lasting - the predominant flavours are lemon/lime oil and fresh vegetal pure agave with white pepper.

Felipe Camarena maestro tequilero at distillery El Pandillo, comes from a family of distillers. His brother Carlos produces Ocho and his grandfather founded Tapatio. Felipe's dedication to the craft is second to none, he is highly inventive having built his own equipment to his exacting standards, 'Igor' the shredder, 'Felipenstien' the crusher and his two-storey oven which steams his agaves evenly. He is dedicated to being as earth-friendly as possible, harvesting rainwater, planting for biodiversity and neutralizing his tequila vinaza before using it as fertilizer.

The water source for his tequilas is essential, he demonstrates through his brands, the unique flavour profiles each water source and its minerals give to tequila. G4 is produced using fifty per cent captured rainwater and fifty per cent spring water, unique in tequila production.

Lou Agave: 'amazing with, lots of pepper (almost chilli pepper), butter, sweet cooked agave, honey, light anise, some fruit, citrus, floral, cinnamon, and more ... absolutely stunning high-proof Blanco. So clean and fresh with minerals.'

Don Heisier: 'This tequila needs to sit and open up. You also need to take your time with this, there is a lot going on with the nose, so do some exploring. This has the complexity of the G4 coming out of 1579. Nose: cooked agave, alcohol, cinnamon, wet cement after a summer rain, citrus (tangerine), vanilla, jalapeño, the sweetness of grilled pineapple and peach. Flavour: starts off hot, has a creamy and spicy mouthfeel, cooked agave, hot cinnamon like the candy atomic fireballs, and citrus. Finish: starts with sweet ripe fruit, then gets spicy like green peppers, the cooked agave comes through, and finishes hot and leaves your mouth tingling. Yes, I would cook with this, like flaming of butter sautéed shrimp, scallops, or clams.'

Cool Chile: consider this as a house pour, the extra alcohol at 54% means that you can use a 35ml measure rather than 50ml of 40%, almost equal alcohol content but definitely bumping up the flavour. Value: 35ml pour £2.17, 50ml pour £3.09

Interesting fact: although Felipe has 3 sources of water at his distillery: spring, rain and deep-well, G4 Tequila is made with a 50/50 mix of spring water and rainwater, producing a tequila that is clean and crisp with a touch of minerality.
