We grind cocoa nibs, unrefined sugar and spices to make a paste which we set in trays, they chocolate is then scored and broken into slabs.
We have used spices available in Maya times, sweet allspice, earthy annatto and just a touch of ancho powder for warmth.
Use to make hot chocolate with milk or water.

use 30-50g per 200ml of milk, heat together in a sauce pan unitl melted and hot, use a stick blender to make smooth, rich and frothy.
