Earth oven, using mesquite and cypress (Sabino) wood and river stones, for 73 hours. Hand smashed in Sabino wood canoes. Fermentation in open/natural cypress (Sabino) wood vats, natural yeast for 3 to 7 days, depending on the weather conditions. Clay pot still and twice distilled.
Tasting Note Delicates notes of butter and spices like cinnamon and aniseed; hints of fruit like soursop and lychees; delicates notes of cooked agave and herbal vapours, as well as subtle smoky notes and incense.
