'Nachos were born in 1940 when, as the story goes, a group of American women walked into the Victory Club in Piedras, Mexico outside business hours looking for a drink and a bite. But Ignacio Anaya (nickname Nacho), the maître d’hôtel, had no cooks in the kitchen. Aiming to please, Mr. Anaya ran to the kitchen and made a quick botana (snack) with ingredients he found. He topped totopos, with cheese and slices of pickled jalapeños, and threw them in the oven.
The women loved it so much they asked for seconds, and jokingly ended up calling them Nacho’s Special. '
