Introducing the third member of the Pensador Family: Especial. Unlike their other mezcal expressions, which have consistent recipes and profiles, Especial will form a limited series of agave spirits. Each batch will be completely unique, showcasing different agaves and different producers from their home region of Miahuatlán. Handwritten batch information will be displayed around striking black labels produced from dyed agave fibres. These spirits are uncompromising flavour bombs; designed to be sipped and considered by customers wishing to expand their sensory horizons.
Unlike Pensador Espadín and Ensamble, these spirits have not been certified as “mezcal”, and are instead classified as “Destilados de Agave”, or Agave Spirits. The pros and cons of certification are a hot topic in the mezcal world. Pensador considers that certification is important to protect and nurture the rapidly growing industry, but that current structures of certification exclude key elements of mezcal culture; namely the independence of small producers and the historical context of the term. By working with both categories, they hope to protect the industry whilst retaining the flexibility to work with independent producers making weird and wonderful spirits.
