Amargo-Vallet is a bitter liqueur from Mexico made using Angostura bark and a maceration of cherry fruits, cloves and a secret blend of roots and spices. Herbal notes of bittersweet dark chocolate and citrus rind balance an earthy richness to create this elixir.
Vallet liqueurs originated in the 1860s, when Henri Vallet left France for Mexico, staying behind to make booze even after the era of French colonialism faded away. The spirits are still made, in Hidalgo, according to the original, 150-year-old recipe.
Use as you would other bitters, in cocktails, added to soda or as an aperitivo.

'The fruit here makes things interesting, with a kind of cherry cola character that offsets the wild bitterness driven by the Angostura root. The bitterness builds and builds as the sweetness in the body fades, leaving behind an intense yet enjoyable bitter finish, full of roots, coffee grounds, and the essence of earth.'

3¢ Cherry Soda (well chilled)
In a high ball glass stir the mezcal and Amago Vallet, add ice and stir again, top with cherry soda, gently stir to combine.
