
Made with white corn, our 10cm corn tortillas are an essential for making street style tacos and other antojitos and when a little older fry for taquitos, totopos and tostadas.
These 10cm size tortillas are perfect for small tacos or quesadillas to eat whilst standing up in the street or at a party, 2-3 bites and they are gone, they also look great served 3 to a plate.

Slow cooked pork tacos with pink pickled onions
Peel and finely slice a small red onion then add a pinch of salt and cover with cider vinegar and a splash of water. Cover and leave to sit until the onions turn pink. Marinate a piece of boneless pork shoulder in Cool Chile Co Achiote Paste whisked together with a mixture of orange and lime juice overnight. Add a little oil to a heavy bottomed casserole dish and brown the meat on all sides, then pour the marinade into the pan, cover and roast at 180°C, for a couple of hours or until completely tender. When cool enough to handle, shred the meat and serve on warmed tacos with the pink pickled onions.

Reheating corn tortillas:
- For best results griddle tortillas one at a time in a dry pan, toast both sides until warmed through and little brown spots appear if desired.
- Use a little spray of water to help re hydrate the tortillas as they reheat if a few days old.
- If necessary tortillas can be kept warm for about 15-20 minutes after reheating by stacking them in a folded clean tea towel, top and serve promptly.
Storage:
Keep refrigerated. Once open, wrap and consume by use by date.
Suitable for freezing (freeze on day of purchase and consume within 1 month).
To cook from frozen, prise one tortilla off at a time and heat in a hot pan on both sides or defrost in the packet overnight in the fridge.

Brilliant red seeds with an earthy, woody flavor and vibrant colour.Harvested from the annatto tree, achiote seeds (‘poor man’s saffron’) are often ground into a paste which is a key ingredient in pork pibil, a traditional recipe from the Yucatán in south-eastern México.
Cool Chile Achiote paste is made in our London factory to our own recipe using NO PRESERVATIVES! We use annatto (achiote) seeds imported from the Yucatan for a rich, earthy flavour and bright red colour.Dilute the paste with a little lime and orange juice to marinate pork, fish or chicken for pibil dishes. It is also used as a base for other marinades when you want to impart a bright red colour, such as Al Pastor marinade.
