Roasted bone marrow, often described as “meat butter” works a treat spread over a warm corn tortilla with a sprinkle of salt, you can add salsa but there is something delicious about the simplicity of the unctuous marrow, corn and salt.
Place the marrows in a roasting tray, bone side down and season with a little salt.
Bake in the oven for approx. 20 minutes until the marrows starts bubbling, you want to keep the marrow inside the bones to scoop out later.
Once cooked, remove from the oven.
Heat 1 tbsp of rendered fat from the marrow bone in a frying pan, heat, then toast both sides of the corn tortillas in the fat until warmed through.
Scoop out the melted bone marrow and spread over your warm tortillas and season with a pinch of salt.
