Aged in refill casks, Terralta Extra Añejo expression layers gentle, oaky flavours atop Terralta’s ripe agave character. Thyme honey, new leather, dates, eucalyptus and lemongrass, supported by a touch of tobacco.

Felipe Camarena, maestro tequilero at distillery El Pandillo, comes from a family of distillers. His brother Carlos produces Ocho and his grandfather founded Tapatio. Felipe's dedication to the craft is second to none, he is highly inventive having built his own equipment to his exacting standards, 'Igor' the shredder, 'Felipenstien' the crusher and his two-storey oven which steams his agaves evenly. He is dedicated to being as earth-friendly as possible, harvesting rainwater, planting for biodiversity and neutralizing his tequila vinazas before using them as fertilizer.

Felipe has three sources of water: spring, rain and deep-well water. The water source for his tequilas is essential, he demonstrates through his brands the unique flavour profiles that each water and its minerals give to tequila.

The Jalisco region is famous for its rainy season, and the roof at El Pandillo distillery is a giant rainwater collection system – leading underground to a 53,000-gallon cistern. This allows them to use the rainwater all year round, even during the dry season. Rainwater subtly provides the tequila with that wonderful smell in the air just before it starts to rain- petrichor.

The spring water and deep-well water both have unique characteristics as well. El Pandillo is at a high point in Los Altos, so the water is not affected by agricultural runoff. The spring water has more minerals in the water compared to the rain; it’s well-balanced and naturally alkaline. The deep well at El Pandillo is over 450 feet deep and is earthy, and highly mineralized.

Terralta is made only with deep-well water, drawn from 450 feet deep, it is filtered through rock hence the high minerality.

    Ryan August: 'Immediately on the nose I’m getting cinnamon and berries, and definitely peaches. Some whisky, and that Terralta minerality, but not as intense in lesser-aged offerings. Butterscotch, Vanilla, not a ton of oak. There’s a lot going on, and this has a very sweet, fruity nose. Almost like bubble gum after it opens up, very fruity. Some molasses. Very complex nose, so much going on. Almost reminds me of a panadería. The tasting is delightful. More agave than the nose suggests but those baking spices, are very fruity and surprisingly sweet. I’m getting cherry, butterscotch and vanilla, and the agave comes through more on the finish. Stunning expression from Felipe, this is damn good.'

    Erica Boomrom: 'Aroma: Berries, minerality and baking spices. A hint of black pepper too. Taste: Light-cooked agave and cinnamon. Caramel and more baking spices, and somewhat peppery, and some minor oak notes. This is light in flavour. Finish: Long lasting with stronger emphasis on fruity notes and caramel. Another top-tier bottle of Terralta. I really like how this is so light in flavour but offers enough complexity to be a great extra añejo.'

    David Gleason: 'A very smooth, soothing aroma. It has hints of cherry and vanilla. The taste brings more cherry/berries and adds cinnamon with a little agave. I know it sounds odd but it is fantastic. The classic Terralta finish (watery, smooth, with some minerality) keeps the light agave and maintains the flavour profile. A definite must. This will stay on my shelf. A great sharing choice to bring out with your friends. They will love it.'

    Interesting fact: although Felipe has 3 sources of water at his distillery: spring, rain and deep-well, Terralta is made only with deep-well water, that and the iron-rich ground in which the agaves are grown, produce a tequila that is high in minerality with earthy notes.
