G4 & Terralta Tequila - NOM 1579

Felipe Camarena makes both G4 and Terralta brands. He has designed most of his equipment (and named it!) to his exacting standards. The oven ensures fully and evenly cooked agave; Igor the shredder, has specially designed blades for quick chopping; while his 19,000 kg metal tahona, called Frankenstein, achieves the same flavour profiles as the traditional tahona but is much more efficient and easier to clean thereby saving water. Water is his other obsession, he has 3 types - rain, deep well and spring water. He uses them in different proportions in his brands. Terralta is made only with deep well water and has lots of mineral notes, while G4 uses 50/50 spring and deep well for a softer profile. I could go on, the man is a genius, follow him on Instagram!
