Still Strength Tequila

After distilling, tequila will range in ABV just like mezcals. Normally tequila is bottled at 40%, but legally can be bottled as high as 55%. The ABV is kept within this range by diluting it with water. On trend is still strength tequilas which are bottled at or near the proof coming off the still. Water might still be added, not only to keep it legal but for the flavour profile of the tequila. It is said that undiluted tequila captures the truest essence of agave. It certainly makes for rich flavours with a creamy/oily texture which is highly appreciated when sipping as well as making great cocktails.
